Pumpkin Fritters (Pampoenkoekies)I know they may sound a little weird to the uninitiated, but pumpkin fritters are absolutely delicious!

Enjoyed either as a light snack or side dish to a traditional boerekos spread, these little South African delights are very easy to make, are surprisingly healthy and always go down a treat.

Naturally sweet, they are a great way to dupe vegetable-phobic youngsters into eating one of their “5-a-day”. When lightly sprinkled with cinnamon sugar however, they make a great sweet treat that are impossible to resist!

Pumpkin Fritters (Pampoenkoekies): Makes 12-14

  • 500g pumpkin
  • 1 cup plain flour
  • 1 egg, beaten
  • 1 tsp. baking powder
  • A pinch of salt
  • Cinnamon sugar (if using)

Method:

  1. Steam the pumpkin until tender
  2. Mash thoroughly and allow to cool
  3. Combine the cooled pumpkin, flour, egg, baking powder and salt
  4. In a non-stick frying pan, add a drizzle of vegetable oil
  5. Using a bit of kitchen paper, spread the oil lightly around the pan
  6. Spoon tablespoons of the pumpkin batter into the pan and fry over a medium heat
  7. After a couple minutes, flip the fritters over and lightly press to spread the batter out slightly
  8. Cook for another 3 minutes and flip over again
  9. Give them another couple of minutes per side
  10. Remove from the pan and place on kitchen paper
  11. Whilst still warm, sprinkle with cinnamon sugar (if using)

  1. AAAhhh Bugger, Just headbutted my computer trying to smell the cinnamon sugar… schlurp… Almost exactly how I make mine, Just use self-raising, and no baking powder
